Le tradizioni della famiglia Rossi come produttori di salumi tipici risalgono al 1800, quando la produzione avveniva in una piccola bottega nel centro di Fontanellato (Parma).
I prodotti principali sono sempre stati, e continuano a essere, i salumi tipici della Bassa Parmense: Culatello, Fiocco stagionato, Salame di Felino, Strolghino, Coppa di Parma, Pancetta stagionata e soprattutto Culaccia®.
